2023 Peru- Early Harvest Trip
We have recently returned from a Southern pre-harvest in early March in Peru and are excited to announce that we will be bringing you the earliest Southern Hemisphere load to hit the USA –loading today. Where Veronica Foods has coined the saying that freshness is the most overlooked consideration in olive oil quality, this hyper freshness allows “3 bites of the apple” where typical production is less frequent between hemispheres. We were on location in Peru over the past few weeks milling -using elite methods like cooling the malaxer (olive paste) and low processing times plus exceedingly short tree-to-mill delays, picking and processing fruit within two hours which yields superb chemistry and preserves the sensory characteristics with our Partner Farm, Oasis Olives (Peru).
