This small batch California Picual was harvested from groves in Esparto California, Yolo County. Made from exceedingly green fruit, it displays bold fruity aromas despite its delicate nature as well as exemplary chemistry including the lowest possible documented FFA, a testament to the perfect condition of the fruit. The antioxidant-squalene content is also remarkably high. Notes include green banana and stone fruit.

Our small batch California Mission was harvested from groves in Yolo County. This complex example displays floral characteristics and notes of green almond, herb and matcha with ample bitterness and astringency.

 

Mission is almost exclusively found in California and this example is one of our oils highest in phenols. High Oleacein (antioxidant) content of 181 PPM.

Kalamata-Ultra-High Phenol

TASTING NOTES 

This limited production early Kalamata displays immediate intense pepper plus some delayed pungency. Containing over 1,000 ppm total phenols it is delightfully astringent and spicy with notes of green tea, savory herb, creamy green almond and artichoke. The combination of picking the green, unripe fruit at low maturity (early harvest) and minimal processing results in high antioxidant content and more specifically, a very high concentration of Oleocanthal at a record breaking 718.87 ppm. Last year this antioxidant powerhouse placed in the Worlds Healthiest Olive Oil Competition and took 1st place in the Oleocanthal category.

This limited production early Kalamata displays immediate peppery sensations at the back of the throat followed by lingering spice and pungency throughout the mouth. The combination of picking green, unripe Kalamata fruit and minimal processing resulted in high antioxidant content and more specifically, a very high concentration of Oleocanthal at 445 ppm. Flavor notes include wheatgrass, malt, and green apple.
